Slow Cooker Chicken Cobbler
If you read my Facebook status last night, you’ll probably put two and two together and realize this is the slow cooker dish that I doubled and therefore made it overflow down the front of my slow cooker. lol So my recommendation, do not double the recipe unless you have a huge slow cooker. 🙂

Slow Cooker Chicken Cobbler

Ingredients
- 1 pound boneless/skinless chicken, cut into bite size pieces
- 1 pound mixed frozen veggies
- 1/2 cup chopped onion
- *2 fat-free chicken gravy, 12 oz ea
- 1-1/2 cups Homemade Baking Mix
- 3/4 cup fat-free chicken broth
- Salt & Pepper to taste
Instructions
- Spray your slow cooker crock with cooking spray. In the crock, mix together the chicken, frozen vegetables, onion and gravy until well mixed. Cover and cook on high for 2 hours. In a medium bowl, stir the Homemade Baking Mix and broth together. Spread batter over the cooked mixture in the crock. Cover and cook on high for another 30 minutes.
- *I didn't have any gravy on hand so I used regular chicken broth and added corn starch to it in order to thicken the broth. It worked just as well.
