Memorial weekend is here and with that comes family gatherings, parties, lots of yummy food and desserts, etc. If you’re having ice cream this weekend, why not try making your own Magic Shell?!?! It’s really simple and quite good. I made both a chocolate and a peanut butter…

For Chocolate Magic Shell:
2 cups chocolate chips
2 tablespoons coconut oil
For Peanut Butter Magic Shell:
2 cups smooth peanut butter
4 tablespoons coconut oil
In a double-boiler, melt down the chocolate or peanut butter. Add the coconut oil and stir really well, until blended. Drizzle over ice cream and serve.
The peanut butter will not harden completely like the chocolate but it does thicken/firm up.
I store the left overs in a pint size jar. They will harden, especially the chocolate, but I just reheat the jar in boiling water and drizzle. If you use refrigerated required peanut butter, you’ll want to store that in the fridge.
