So how many ways are there to use a Whoopie Pie Pan? Good Cook recently challenged their bloggers to think a bit outside the box for some of their Sweet Creations products. I’m not very good with “outside-the-box” creativity so when my Whoopie Pan came, I made… whoopie pies. They were yummy, they were fun but not really creative {recipe is coming soon}.
I spent the weekend thinking about what I could possibly make that might be a little creative than whoopie pies in the whoopie pie pan. Several ideas came to mind but I finally settled on making mini apple galettes. It’s something I’ve never made before, I had 80 lbs of apples sitting in my kitchen and I thought I would just give it a try and hoped it would work. Guess what? It did and they turned out to be a nice size.
You could easily do this with ready made pie crust and cut your time down even more but I went ahead and made my own pie crust. If you have a whoopie pan, you’ll want to make either a double crust batch or use two pre-made pie crusts.
For the pie crusts, you’ll need flour, shortening, salt, apple cider vinegar and water.
Combine your flour and salt in a medium bowl.
Add in your shortening with a pastry cutter or two knives.
Sprinkle in your apple cider vinegar and water one tablespoon at a time and mix. Gather into a ball and wrap up in plastic wrap until your ready with your apples.
For the filling, you’ll need apples, flour, brown sugar and butter. You can also add cinnamon and nutmeg if you want.
Mix all the dry ingredients together. Slice your apples really thin and toss in the dry mixture. Evenly coat your apples.
Unwrap your dough and divide into two balls. Rewrap the second ball while you roll out the first. Roll the dough thin but be careful not to work with it too much or it will get tough.
Use a large circle cookie cutter like this, cup, bowl or something else larger than your whoopie pie pan circles to make your cuts in your dough.
You can see here that my circles are quite a bit larger than the whoopie pie pan circles. And in my absent minded state, I never bothered to grease the pan, even slightly. The galettles still popped out nicely though. 🙂
Carefully push in your pie dough to line the whoopie pie circles. Start adding the apples.
Continue adding dough circles and apples until you fill up the pan.
Top with little cuts of butter and fold the remaining sides.
Bake for about 20 minutes or until golden brown. While the galettes are baking, melt down the white chocolate.
Drizzle with white chocolate.
Serve the galettes warm and with whipped topping or ice cream. Enjoy.
