Caramel Cookies
(taken from Weight Watcher’s site)
These are a really yummy cookie and if you’re on Weight Watcher’s, they are just 1 PointPlus each.
You will need:
1/2 c. unsalted butter, softened (or I used 1/4 c. + 2 T. coconut oil – melted)
1 c. brown sugar, dark (I used 1 c. raw sugar)
1 large egg
1 tsp Vanilla Extract
1-3/4 c. whole wheat flour
1/4 tsp salt
1/2 tsp baking soda
Directions:
Preheat over to 350 degrees.
In a large bowl, cream butter (or oil), sugar, egg and vanilla. Add remaining ingredients and beat thoroughly.
Scrape dough out of bowl and onto a large piece of plastic wrap. Roll dough into a log, about 2-1/2 inches wide. Completely wrap dough in plastic and refrigerate until firm, at least 20 minutes or overnight.
Slice dough into 1/8 inch thick slices and place on an ungreased cookie sheet about 1 inch apart. Bake until lightly browned around the edges, about 7-8 minutes.
Cool cookies for 1 minute and remove to cooking rack.
We made these both with and without the coconut oil and the ones with coconut oil were our favorite. The oil provided just a hint of the coconut flavor but was not overpowering.
