Want a fun twist on scrambled eggs or omelets? Try these baked eggs in a muffin tin by mixing up the ingredients, pouring them in a muffin tin and baking away. These are yummy, especially right out of the oven. We found that we don’t like them as much when they’ve been reheated the next day, however, if you need a quick breakfast, they aren’t bad (they just don’t taste as fresh). This makes 12 servings.

Ingredients
- 1 dz Eggs, (save those eggshells)
- 1 Green Pepper
- 1 Red Pepper
- 1 small Onion
- 1 c. ham, chopped and fully cooked
- Cilantro, optional
- Salt & Pepper to taste
Instructions
- Pre-heat oven to 350 degrees. Spray/grease your muffin tin well (these will really stick if you don't)
- Add all the eggs to a bowl and beat. Set aside.
- Chop the peppers, onion, ham and cilantro. Add to eggs and mix well.
- Pour egg mixture into well greased/sprayed muffin tin. Bake in oven at 350 degrees for about 20-25 minutes.
- Remove from oven and use a knife, if necessary, to loosen sides.
- Serve immediately or refrigerate for up to a couple days.
