I love simple meals in the summer time, especially when they don’t involve the oven or stove. Really, who wants to turn on the warmest appliance during the warmest days? Not me. This is one of those simple meals. It’s light, refreshing, quick and cold! If you like cucumbers and tuna, you will probably enjoy this meal.
What you need:
Cucumbers, washed and peeled (optional)
Red Pepper, chopped
Yellow Pepper, chopped
Salt & Pepper to taste
If you have a certain way you like to make tuna, go ahead and make it the way you like. That’s one of the nice things about recipes like this. It’s very versatile and you can add what you enjoy or leave out what you don’t.
Slice up your cucumber into about 2″-3″ slices. Use a melon baller or spoon to scoop out the seeds and center. Don’t scoop it out all the way but instead, leave a small bit at the bottom to keep the tuna from falling out.
Stuff the cucumbers with the tuna and top with fresh parsley. Serve immediately or chill if desired.
